Vinification and elevage

After a long pressing of whole cluster, the free run juice,

strictly protected from oxygen, is separated from that of the press and

clarified by natural sedimentation. Fermentation takes place for

70% in stainless steel tanks and 30% in new oak barrels. Follows

a period of eight months elevage on fine lees regularly resuspended in

wine.
