Vinification and elevage
After a long pressing of whole cluster, the free run juice,
strictly protected from oxygen, is separated from that of
press and clarified by natural sedimentation. Fermentation
is carried out for 70% in stainless steel vats and 30% in barriques
new oak. A period of eight months of elevage on fine lees
regularly resuspended in wine.
