The vinification
The Cuvée Annamaria Clementi is the result of the pursuit of excellence, both in the vineyard and in the winery. The base wines are made exclusively from musts of first pressing. The alcoholic fermentation takes place exclusively in small oak barrels, obtained from selected woods and aged for at least three years. Here the wine remains on its lees for 6 months, during which malolactic fermentation. No compromise, no concessions: only the best wine barrels, of 18 base wines of origin, is drawn off to give birth to the Cuvée Annamaria Clementi. A pair of tanks flying transfers it by gravity, from the barrels to the tank assembly. A long aging in contact with yeast, which lasts for more than 7 years, determines its unique profile. A Franciacorta absolute. Disgorgement occurs in the absence of oxygen, using a unique system, designed and patented by Ca 'del Bosco. This prevents oxidative shock and further additions of sulfites, making our Franciacorta purest, most pleasant and most enduring. Finally, each bottle packaged is marked unambiguously, to ensure traceability.
