The vinification
The base wines of the Prestige Cuvée are obtained by applying a strict processing. The grapes are harvested by hand coded vineyard to vineyard, cooled in the cell and, before being pressed whole, are selected by expert hands and eyes. Alcoholic fermentation in stainless steel tanks controlled cellars where the wines remain until the following March. Seven more months of aging are needed wine for illimpidirsi, mature and bring out the most of the character of the vineyards of origin. Later, the wines are expertly blended with noble reserve wines of the best years (20-30%) in the "magic rite" of the creation of the cuvée. This technique gives Cuvée Prestige outstanding personality. The essence of Franciacorta style Ca 'del Bosco. Only after aging on the lees average of 25 months this Franciacorta can express all its richness and identity. Disgorgement occurs in the absence of oxygen, using a unique system, designed and patented by Ca 'del Bosco. This prevents oxidative shock and further additions of sulfites, making our Franciacorta purest, most pleasant and most enduring. Finally, each bottle packaged is marked unambiguously, to ensure traceability.
