This wine, obtained by the Ripasso, ie fermentation of Valpolicella Classico Superiore, takes its name from the premises without ceiling, called "Solane" because they are well exposed to the sun, which contain the racks on which are dried grapes.
The grapes: 70% Corvina, 30% Rondinella. The vineyard: various plots selected on the hills of the classic area; the vines, grown on trellises (Guyot and cordon) on a clayey-calcareous rich in texture, produced about 100 tons of grapes per hectare.
The vinification: the grapes are harvested by hand in small boxes, the first week of October; the different batches of grapes are vinified separately "in the red" with 15 days of maceration and with careful management of temperature and pumping to try to diversify wine grapes and extolling the peculiarities of the territory from which they derive. In November of these wines, using an ancient technique wisely revisited, re-fermented on whole grapes partially dried enriched in fruity elegant and velvety tannins, while the remaining part is waiting until February the production of Amarone to be "brush up" on His marc through which buys power and character. After the blend, to harmonize these opposing structural components and aromatic, a few months before the wine matures in oak barrels and then rests in large barrels; the aging in wood lasts 15 months. After bottling, a reasonable bottle aging before marketing.
The wine: The Valpolicella Classico Superiore Ripasso Solane wine is strongly linked to the territory and for this sincere and full of character. It shows a beautiful ruby color and deep; the characteristic scent, clean and overall, has intense aromas of fresh red fruit and cherry jam, wrapped in vanilla notes. The flavor is warm and frank, balanced, with an elegant spicy and roasting. It has a strong personality thanks to the distinct elegance and finesse of aromas, flavor and persistence in the mouth. Excellent and enjoyable to young, improves over time.
